Sencha means literally “common tea.” Common refers to the fact that most of the tea produced on Japan is a sencha, rather than it being of common grade. You will find everything from supermarket senchas to the very fine machas that are used in the Japanese tea ceremony. Most senchas has a sweet, grassy flavor as they tend to be steamed and not roasted or fried. Taste ultimately depends on the season and the garden.
